Raspberry Coconut Milk Smoothie Bowl

Coconut milk when applied topically on the skin helps in maintenance of the skin’s elasticity. This effectively reduces wrinkle formation giving you a more youthful appearance. Its antibacterial properties are said to contribute towards acne prevention. But it coconut milk is also highly beneficial in food as well.

  • Weight loss: Coconut milk contains medium-chain triglycerides (MCTs), which researchers have linked with weight loss. MCTs stimulate energy through a process called thermogenesis, or heat production.Some studies indicate that MCTs work to reduce body weight and waist size. They may also balance out unstable gut microbiota. A lack of this stability may play a role in developing obesity.
  • Heart health: Research has linked diets rich in saturated fat with high cholesterol and an increased risk of heart disease
  • Boots immune system: Coconuts contain a lipid called lauric acid, and many researchers believe that lauric acid can support the immune system. Some findings indicate that lauric acid has antimicrobial and anti-inflammatory properties.
  • It contains anti-oxidants: Coconut milk is rich in vitamins C and E that are well known for their anti-oxidant properties. Free oxygen radicals are formed by our body tissues during the process of metabolism.

Ingredients
  • 1 ½ cups (350 ml) full-fat coconut milk
  • 1 cup (110 g) frozen raspberries
  • ¼ cup (60 ml) MCT oil or melted coconut oil, or 1⁄4 cup (40 g) unflavored MCT oil powder
  • ¼ cup (40 g) collagen peptides or protein powder
  • 2 tablespoons chia seeds
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 1 tablespoon erythritol, or 4 drops liquid stevia
Toppings (optional):
  • Unsweetened shredded coconut
  • Hulled hemp seeds
  • Fresh berries of choice
Instructions
  1. Place all the pudding ingredients in a blender or food processor and blend until smooth.
  2. Serve in bowls with your favorite toppings, if desired.
  3. Will keep in the fridge for up to 3 days
