Muffin Tin Eggs

Hosting a gathering and planning for an easy breakfast? These impressive eggs are easy to make for a large crowd. (serves 6, makes 12)

(Prep and Cook Time: 15 Minutes)

INGREDIENTS

  • 8 eggs
  • 1/2 cup milk
  • 12 pieces of prosciutto
  • 12 cherry tomatoes; quartered
  • 4 green onion thinly sliced
  • 1 cup feta cheese crumbled

INSTRUCTIONS

Preheat the oven to 350. Crack eggs into a bowl. Add milk, salt and pepper. Whisk until smooth.

Line each muffin hole with prosciutto. Add 4 cherry tomato pieces a sprinkling of green onion and feta to each hole.

Pour in egg mixture until 1/4 inch from the top of hole. • Bake in oven for 10-15 minutes, depending on desired doneness.
